So if you are following this blog, it’s safe to say food is a big part of my life! Whether I’m cooking something new at home or immersing myself in the experience of going somewhere new and trying new things! It’s literally been my favorite thing to do, especially with the move to Denver, Cory and I have been fortunate enough to be able to make that a priority when we go out on the weekends. Even writing this brings up so many stories I want to tell you but I’ll leave that for another time.
One of my favorite types of food to cook is Mediterranean, not sure if it has to do with my Italian heritage or my obsessive feelings with both Greece and Italy, whatever it is I’m all about it, food, culture, arts, history, people I love it. I’m so excited I finally get to go! Greece 2019! (More to come on that later) Anyways, Mediterranean cuisine just makes so much sense to me they use what they have around them, surrounded by water they eat a lot of fish, the climate allows to grow so many fruits and vegetables, it’s so fresh and clean. I’m sure you’ve heard of the Mediterranean diet it’s one of the healthiest out there for this reason.
Now I’m getting off track a bit, the last time we were at DCM (Denver Central Market) we picked up a lot of great finds including lamb kofta which is basically lamb on a stick. This one in particular included spinach and feta and I ended up putting a Greek feast together the night we made them so yummy!
The lamb kofta is to the left in this picture and of course it was a local product, which I appreciate thoroughly. We took these gems home and put a great meal together!
I didn’t want to overwhelm the meat with so much seasoning so I did a simple salt and pepper here.
I think any type of food on a stick is just fun, reminds me of carnival food! So I stuck them right in the pan with their sticks. Also, I’m not sure how Greek this is but we also bought Italian sausage stuffed jalapenos as well and we made them with the meal!
Next, worked on a fresh salad, including cucumber, tomato, crisp peppers and bright red onion. Add a little apple cider vinegar, olive oil, salt and pepper and mix. Super simple but so delicious!
And, in the end we were so happy, such fresh ingredients and simple cooking methods is the way to go. When you have such fresh ingredients you don’t need to do much, just let the food shine!
