I’ve been dying for some Mexican food lately, and I found just the right recipe to curb my cravings. These spicy tofu enchiladas are fantastic, it took a few steps to get the filling done but it was definitely worth it! I really enjoyed making this, and the end result was so yummy!
Here’s what I used for the filling
1 pkg of tofu
1 can diced tomatoes
1 can corn
1 1/2 C black beans
1 pkg taco seasoning
1/2 onion chopped
1 C shredded cheese
1 can enchilada sauce
The first step here is to press the tofu, make sure you do this because the more water you get out the better the tofu will stay together when you cook it. This is something that I’ve noticed cooking with tofu. Sauté onions season with salt and pepper, set aside. Cut the tofu in small cubes, heat up a medium size pan and sauté, add the taco seasoning, and combine until the tofu is covered. once covered add black beans and heat through. Add the cooked onions and mix, set aside.
I used canned enchilada sauce and this was a great time saver and it was also delicious! I used green enchilada sauce. I also made a spicy tomato and corn salsa and I added that inside the enchiladas it was fantastic, I love the corn here because it brings a great sweetness to the spicy enchiladas.
For the corn salsa grab a medium pot and add the corn, tomato’s, and jalapeño and heat on medium for about 5 minutes
Ok, the next step is building your enchiladas but first heat your oven to broil. Take a 13×9 pan and pour a 1/4 of your enchilada sauce and the corn and tomato salsa and pour it in the bottom of the pan. Take your tortilla and fill it with 1/4 C of the tofu, black bean, and onion mix, top with the corn and tomato salsa and cheese shreds. Roll your enchiladas in the pan, not to tight or they will tear. Once you’ve rolled all of your enchiladas line them up in the pan and top with the rest of your enchilada sauce and some more cheese, because well it’s cheese! Haha 🙂
Now that you have your dish put together you’ll need to melt the cheese on top so broil until the cheese is browned and it’s bubbling. For serving I like to shred a little lettuce on top along with a dollop or sour cream.
It is so incredibly wonderful the crispy outside of the tortilla and the spicy tofu is soooo good I promise this will be a family favorite! Enjoy
